Classic Chinese Congee (Jook)

Add 1 cup of jasmine rice and 8 cups of water or chicken broth to the inner pot. Add a 1-inch piece of fresh ginger and 2 garlic cloves. Select the Porridge setting. After about 50 minutes, you'll have a silky, smooth congee. Top with sliced green onions, a soft-boiled egg, crispy shallots, white pepper, and a drizzle of sesame oil. For a heartier version, add shredded rotisserie chicken in the last 10 minutes of cooking.

Savory Breakfast Rice Porridge

A Japanese-inspired okayu that's lighter and less broken-down than congee. Use a 1:7 ratio (1 cup rice to 7 cups dashi or light chicken broth). Select Porridge and cook for 35-40 minutes for a porridge where the rice grains are still partially intact. Season with soy sauce and mirin. Top with pickled plum (umeboshi), nori strips, sesame seeds, and a raw egg yolk. This is the ultimate restorative breakfast.

Creamy Steel-Cut Oatmeal

The SpeediChef's Porridge setting works beautifully for oatmeal too. Add 1 cup of steel-cut oats and 3 cups of water or milk to the inner pot. Select Porridge. In about 30 minutes, you'll have perfectly creamy steel-cut oats — far superior to stovetop versions that require constant stirring. Top with fresh berries, a drizzle of honey, and toasted almonds for a nutritious start to the day.
