Machine limit vs best taste

The SpeediChef automatically switches to Keep Warm when cooking finishes and can maintain serving temperature for up to 12 hours. That is the appliance limit. SpeediChef Kitchen Lab held jasmine rice and scored dryness at 2, 4, 6, and 12 hours: peak quality through 4 hours, acceptable through 6, noticeably drier by 12.

Food handling basics

If you will not eat the rice within a few hours, portion it into shallow containers and refrigerate. Do not leave cooked rice at room temperature for extended periods. Keep Warm is for holding hot rice, not for cooling leftovers. Reheat refrigerated rice until steaming hot; add a tablespoon of water per cup when reheating in the SpeediChef or microwave.

Brown rice and porridge

Brown rice and thick congee dry differently than white rice. Expect brown rice to firm up faster on Keep Warm. Congee may thicken; stir in broth when reheating. For overnight porridge, prefer Delay Start so cooking finishes near breakfast rather than holding finished porridge for 12 hours.
